First - consider the horse you are riding.
You will need to be on a horse that is smooth at the canter. If you don't like the canter on the horse you are riding, maybe you can ask to try a different horse.
Ask your trainer to help you do the following and watch your hand and body position as you:
Get the horse you are riding trotting smoothly, then ask for the canter.
Canter only three or four strides, then ask for the trot.
Trot three or four strides, and ask for the canter again.
Keep doing that, going up and down until you feel comfortable moving between the gaits.
For variation, just try asking for the canter up from a walk, then back to the walk after just a few strides.
This will help you feel more confident about the transitions up and down, then once you are confident about those, then increase the canter from three strides to four, then five, etc.
Slow but steady. Horse training (and rider training) takes time and accidents happen when you try to rush things.
