Share cooking tips and recipes here. If its from a cookbook say where you got it, please.Got a crowd to feed? Spaghetti is a favorite at the Crandals.
JANE CRANDAL'S SPAGHETTI
Chop
1 onion
Coarsely. Start it frying on low heat with a couple of tablespoons of vegetable oil in a large pot. Stir every couple of minutes. Peel and crush then add
5 - 10 garlic cloves
When onion is translucent, then add
1/2 cup chopped celery (optional)
4 cups chopped fresh tomatoes (optional)
1 cup chopped mushrooms (one small can)
2 tbsp. Italian seasoning
3 15-ounce cans tomato sauce
When it reaches a simmer, reduce heat an let simmer for a half hour or until sauce is thickened. Adjust the seasoning (salt? pepper? paprika? a little sugar if it is too tart?)
While the sauce is simmering, put a big pot full 1 gallon of cold water on high heat.
When it comes to a boil, add
2 packages of pasta to the water.
Cook pasta according to package directions and drain.
Combine pasta and spaghetti sauce in a big bowl. It looks better if you dump in the pasta first.
Serve with
Tossed green salad
Carrot sticks
Grated cheese
Enjoy!

| Jane Crandal & JB | 2010-07-30 01:08:59 | | When the garden gives zucchini, this recipe gives variety. It is possible to eat a LOT of these green squash with this recipe, the below amounts serve two.
JANE'S ZUCCHINI PANCAKES
Finely grate
6 small or 4 medium zucchini. This should yield 6 cups of grated zuke. Grate
1 small onion (about 1/2 cup) and mix in thoroughly with zucchini and
3 tablespoons salt.
Place mixture in a non-reactive colander and put a small bowl or plate on top of it to press out some of the moisture. Leave it sit for at least a half-hour.
Dump the mixture into a clean dishtowel, and twist and press until it doesn't weep green fluid when pressed. Dump mixture into a clean bowl. This should yield about 1 & 1/2 cups of pressed zuke.
Add
4 eggs
1/2 to 2/3 cups whole-wheat flour
Stir until mixed, the consistency should be like thick pancake batter.
Fry in hot oil -- flatten each spoonful as it's dropped into the oil. Deeper oil will give a crisper consistency. If the pancakes don't firm up on the first batch, add a little more flour. They should be like potato pancakes -- crunchy on the outside and slightly mushy inside. Serve immediately with sour cream or thick yogurt.

1 cup of chocolate chips
1 cup of butterscotch chips
1/2 cup of peanut butter
6 cups of Rice Krispies Ceareal
*Directions*
1. Melt in a medium pot on a low fire the chocolate chips, butterscotch chips, and peanut butter until smooth. (a few lumps are OK)
2. Add the Rice Krispies to your chocolate mix and put in a small square pan (8 by 8)

I have a recipe for you, and here it is.
first, take out 2 corn tortillas and put some beans on it.
2nd, put other items of your choice.
3rd, put it in the oven- oh, put in cheese, it will come out melty when it is done in the oven.

3/4 cup of Crisco butter shortening
1 1/4 cups of firmly packed light brown sugar
2 tablespoons of milk
1 tablespoon of vanilla extract
1 large egg
2 cups of all purpose flour
1 teaspoon of salt
3/4 teaspoon of baking soda
1 cup of semisweet chocolate chips
Heat oven to 375 degrees. Combine butter shortining, brown sugar, milk and vanilla in a large bowl. beat at medium speed of electric mixer till well blended. Beat in egg. Combine flour, salt, & baking soda in a separate bowl and then into shortening mixture until just blended. Stir in chocolate chips. Drop dough by spoonfulls onto ungreased cookie sheets.bake 7-12 minutes untill disired doneness. Cool on cookie sheets for 2 minutes before removing to cooling racks.Enjoy! Yum!
Note: if your doubleing the cookie recipe, decrease milk by one tablespoon. Also be cautious not to over beat batter. | Maid Mairain & Dawn Rising | 2010-08-20 14:49:49 | | Crunchy Baked Fish
Ingredients:
3 Tbsp. Mrs. Dash® Lemon Pepper Seasoning Blend
4, 4 oz. tilapia or catfish fillets
½ cup corn flake crumbs
juice of half a lemon
cooking spray
Directions:
1. Preheat oven to 350° F.
Spray 9 x 9 x 2 inch pan with cooking spray.
2. Place fillets in pan. Evenly sprinkle tops of fish with 1 Tbsp. Mrs.
Dash® Lemon Pepper Seasoning Blend. Squeeze lemon juice
over fish.
3. Toss corn flake crumbs with remaining 2 Tbsp. of Mrs. Dash®
Lemon Pepper Seasoning Blend. Carefully top the fillets with the
corn flake crumbs.
4. Bake for 20 minutes or until the fish is fork tender.

"The Iroquois Indians cultivated and used the Three Sisters (corn, squash and beans) in their diet. This is a recipe passed down by our relatives. You may use regular corn instead of hominy, but hominy is more traditional."
Ingredients:
2 cups canned white or yellow
hominy, drained
2 cups fresh green beans, trimmed
and snapped
2 cups peeled and cubed butternut
squash
1 1/2 cups diced peeled potatoes
5 cups water
1 1/2 tablespoons chicken broth
2 tablespoons butter, melted
2 tablespoons all-purpose flour
1/4 teaspoon pepper
Directions:
1. Place the hominy, green beans, squash, and potatoes into a pot, and pour in water and chicken broth. Bring to a boil, then reduce heat to low, and simmer until vegetables are soft, about 10 minutes. Blend flour into the butter, then stir into the soup. here is a recipe
Giant Molasses Cookies
4 1/4 cups flour
1 TBSP Ginger
1 1/2 TSP Cinnamon
1 1/2 TSP Baking Soda
1 TSP salt
1/8 Tsp Cloves
1 1/2 CUP Sugar, Divided
1 CUP Vegetable Oil
3/4 CUP Light or dark Molasses
2 Large Eggs
Oven to 350 F.
Combine dry ingredients together
In large bowl or mixer, blend 1 1/4 cups sugar, oil, eggs and molasses until smooth. stir in dry ingredients. Refrigerate dough 15 minutes. Place remaining 1/4 cup sugar in small bowl. Using ice cream scoop, form cookie dough into balls; roll balls in sugar. Place on greased cookie sheet 3inches apart and bake 15 to 18 minutes until golden. Cool. These cookies freeze well. Are you copying these from another source? The reason I ask is because of the spelling of Mrs. Dash looks like it was copied from somewhere.
