Kaiserschmarrn (Austrian pancakes)

1/4 cup raisins
1 cup milk
5 eggs
1/4 Cup White Sugar
1/2 teaspoon vanilla extract
1 cup all-purpose flour
2 tablespoons butter
1 tablespoon butter, melted
1/4 cup confectioners' sugar, plus more for dusting
Your favorite jam

1.In a medium mixing bowl, beat together the milk, eggs, white sugar, vanilla, and salt. Gradually whisk in the flour to make a smooth batter. Stir in the raisins.
2.In a large skillet melt 2 tablespoons butter over medium heat. Pour the batter into the skillet and cook 5 to 6 minutes, or until the pancake has set and the bottom is golden brown. Turn over the pancake and cook 3 minutes, or until this side is also golden brown. Using a spatula or two forks, tear the pancake into bite-size pieces. Drizzle in the melted butter and sprinkle with confectioners' sugar. Turn up the heat to medium high and use a spatula to gently toss the pieces for 5 minutes, or until the sugar has caramelized. Sprinkle with additional confectioners' sugar and serve with jam.

Vanille Kipferl (Almond Crescents)

2 cups all-purpose flour
1/3 cup white sugar
3/4 cup ground almonds
1 cup unsalted butter
1/2 whole vanilla bean

1.Preheat oven to 325 degrees F (170 degrees C).
2.Mix dry ingredients. Cut in butter with pastry blender, then quickly knead into a dough.
3.Shape dough into logs and cut off 1/2 inch pieces. Shape each piece into a crescent and place on a non-stick paper lined cookie sheet.
4.Bake approximately 8 to 10 minutes. Cool 1 minute and carefully roll in vanilla sugar. (To make vanilla sugar, blend 1/2 vanilla bean with 1 cup of sugar, sieve). Tip: vanilla sugar comes out like powered sugar, to make it stick to the cookie better, I mix it with regular sugar.

1 cup shortening
1 cup peanut butter
1 cup packed brown sugar
1 cup white sugar
2 eggs

2 (9 ounce) bags milk chocolate candy kisses, unwrapped

Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.

In a large bowl, cream together the shortening, peanut butter, brown sugar, and 1 cup white sugar until smooth. Beat in the eggs one at a time, and stir in the milk and vanilla. Combine the flour, baking soda, and salt; stir into the peanut butter mixture until well blended. Shape tablespoonfuls of dough into balls, and roll in remaining white sugar. Place cookies 2 inches apart on the prepared cookie sheets.

Bake for 10 to12 minutes in the preheated oven. Remove from oven, and immediately press a chocolate kiss into each cookie. Allow to cool completely; the kiss will harden as it cools.

The bets fudge is Eaglegirl's. Creamy, sweet, perfect.... Several weeks ago Eagle made fudge, and she left it cooking for a few seconds longer than it was supposed to. It was crunchy, hard, and crumbly.

My favorite recipe is italian beef ( my family has a tidbit of italian in us) get the canned jalepino and just dump all the juice and a couple of peppers in a slow cooker, then add five lbs. of beef, just put it on low and let it cook all day. on your way home from work, just grab some hoaie buns and spoon out some beef and put colby jack cheese on it and you're ready for dinner.

* 2 cups all-purpose flour, stirred or sifted before measuring
* 2 1/2 teaspoons baking powder
* 3 tablespoons granulated sugar
* 1/2 teaspoon salt
* 2 large eggs
* 1 1/2 to 1 3/4 cups milk
* 2 tablespoons melted butter

Sift together flour, baking powder, sugar, and salt. In a separate bowl, whisk together the eggs and 1 1/2 cups of milk; add to flour mixture, stirring only until smooth. Blend in melted butter. If the batter seems too thick to pour, add a little more milk. Cook on a hot, greased griddle, using about 1/4 cup of batter for each pancake. Cook until bubbly, a little dry around the edges, and lightly browned on the bottom; turn and brown the other side. Recipe for pancakes serves 4.
